VINEYARD AND GRAPES
Our 110 hectares of vineyards are located in the Mehedinti-Vanju Mare wine-growing area, 3 km from the Danube, surrounded by oak forests. The more than 2,000 hours of sunshine per year, together with the warm breeze coming from the Danube and the reddish-brown soil, rich in iron oxides, create a unique terroir, conducive to red grape varieties and wines suitable for ageing, while heterogeneous soils based on limestone, make our white grapes unique.
Our red grape varieties: Fetească Neagră, Cabernet Sauvignon, Cabernet Franc, Syrah, Merlot.
Our white grape varieties: Tâmiaoasa Românească, Fetească Albă, Petit Sauvignon Blanc, Chardonnay, Riesling de Italian.
VINIFICATION AND WINE
In Dascălu winery, the harvest is planned after a careful monitoring of the quantitative and qualitative technological parameters of the grapes, aiming to establish the optimal harvest moment, by periodically checking the sugar content to establish the alcoholic potential, acidity and pH
Harvesting to be done depending on reaching the desired technological maturity for each type of grape.
The grapes are harvested by hand, in small crates, then transported to the winery and kept overnight in the cooling room at less than 8°C.
The next day, the grapes are carefully selected on the sorting table to remove all bad bunches and grapes, following the specific stages for each type of wine: white, rosé and red
